Most if not all of those are only the surface of the characters. All of them can change for the better and even change to being good if they were evil. Shadowheart, Astarion, and Lae'zel go through the most drastic changes over time that I've seen. You don't have to agree with their actions for this to happen either. Playing as the origin characters can also give you a lot of insight into who they really are as opposed to the persona they wear.
You can respec all of them to different classes and they have Karlach and The Dark Urge added as well. Karlach is probably the most likable of them from the start. You can't remove Origin characters completely but you can just not have them join you with the exception of Lae'zel at the Nautilus and Shadowheart after the crash. You know how to get Withers, right? That is the point that you can get hirelings. Just long rest after you encounter him and talk to him at your camp.
If you get close enough it will activate an interaction but you don't have to group up with them. You have a lot more options and choices available now than in Early Access, and that includes avoiding almost all Origin characters. Take Shadowheart though, even if you don't take her out into the field. I'd rather not say why since it is a spoiler but I will say interacting with Shadowheart beyond joining up with her after the crash isn't necessary.
As I said in the post I linked to: I don't care if they have more to them. Everyone has more to them than what they present on the surface. But if what they present on the surface is a complete ♥♥♥♥♥♥♥, then I don't want to find out what's beneath that, because it's more-than-likely to be ♥♥♥♥. As for the newer characters: After the Original Sin games and the first batch of this game's characters, I have no faith in Larian's ability to write likable companions.
