If you pass a difficult speech check, you can convince her to use the Owlbear Egg instead.
It will change some things up in Act 3 depending on which egg you sell to Esther.
Give it to the speciecist lady, make an omelet or sell it.
It does change up quite a lot depending on which egg you give. The quest itself should give you a hint to what will happen if you sell her the Gith egg.
Both are irreversible, and there could be an added complication from the Owlbear Egg: I've seen a claim where you don't get a certain (obvious) ally at the end if you do the Owlbear egg instead. Not confirmed though...
However, if when you steal the Gith Egg (also make sure you start the Q without Lae'zel so no difficult persuades to do), then give it to Lae'zel afterwards, then she keeps it in her pack the whole way through, there's another minor change at the epilogue party...
