Elminster is a Chosen of Mystra. People who are Chosen by a deity are granted very high levels of power making them almost demigods. He's known as the Sage of Shadowdale, and as Gale mentions, he's over 1300 years old.
He is literally the most powerful wizard of the Forgotten Realms. But even with all of that power, he'd be hard pressed to fight the Absolute head on. That's why it falls to Gale, and us.

Wizards in Tolkien's Work are actually angelic spirits who possess demigod-like powers. However, before coming to Middle Earth, the wizards were given explicit commands to not use their full power to resolve the whole Sauron conflict. Their mission was to inspire the people to stand up against his evil on their own, instead of looking to the gods to save them.
Sauron was also one of these angelic spirits, though one that had turned to corruption and evil. We saw how powerful he was even after his body was destroyed, so imagine what the wizards could do if they decided to go all out.
