Sorcs get metamagic to buff/modify spells and better multiclass options(Sorclock, Sorcadin), plus ability to act as the party face due to being a Charisma class. It's basically pure power vs versatility
4 Sorcerers is significantly better.
Immortality doesn't kill things. Sorcerers are better and faster at killing things so there's no need for that level of defense.
The difference in damage output and speed is especially noticeable when you're multiplying it by 4. It's not even a contest. The defensive overkill you're talking about is just that: overkill.
Im playing game on Tactical, so heres what i can share with you:
1) there arent that much quests to miss when taking a rest, in Act 1 there is like 3 in total including underdark and mountain pass.
2) On tactical you often are hit hard and must use abilities. Cleric and Druid tanks by constantly self-healing, Fighter/Barbarian/Monk also gets hit alot. If you dont use spells you will have trouble.
3) underdark has level 7 enemies and level 4-5 is common. Mountain pass has lvl 5-7 common. Those guys deal alot of damage, to the point of short resting every encounter.
