We've detected a data mismatch....

Go this error open opening the game, says there is a possible data mismatch. The game runs fine and all saves stay. I've tried a few methods I've found to get rid of that message to no avail. Should I just not worry about it? Hoping come the 3rd it will go away as everything gets wiped.

Do a validate files check.

If still happening add "--skip-launcher" to the properties. That will bypass the launcher and might show the launcher rather than the game has an issue.

I’ve had that too, seemed to be a temporary problem syncing with cloud files. I ignored it and it went away.

Yeah, got this error before too.

The only solution I found was to do a complete reinstall. All 7-8 hours worth of it...

But simply uninstalling the game from Steam won't fix the data. You need to go in and manually delete your BG3 folders from your computer.

And just to be extra safe, you might also need to delete your Larian launcher file and redownload that with BG3.

In fairness though, uninstalling the game isn't that big of a concern. Even the developers themselves are encouraging people to do exactly that, in preparation for full release, because of how much the game will be getting overhauled from EA.
