are vampire spawn considered undead?

Typically, yes. Though from what I can tell undead works a little different in 5e (as things tend to in every edition) and moreso in BG3. I seem to recall some dataminers finding indications of Astarion potentially taking damage from running water under the right circumstances.

According to vampire spawn as creature in the book. Yes. Basically a minion to a vampire.

If this is about Astarion, I believe he may be a Vampire Thrall or not yet a spawn, he's certainly not undead nor looks undead.

(Yes Astarion took damage from running water in earlier patches but removed it. He's not a complete vampire spawn otherwise it would be quite difficult having him in daylight)

Doesn't he literally explain the reason he can walk around in daylight is because of the Tadpole when you meet him?

All vampires are undead.

Astarion is a Vampire Spawn - the tadpole protects him from the sun.
*While everyone else wants to be cured, he wants to learn to control it.

The running water was removed because the path-finding was pretty bad. Whether it will be added back in or hand-waved as something else the tadpole protects him from is unknown.

I can't remember exactly, it was a while ago. I was thinking based off the vampire spawn details from the beastiary. But it could be Larian homebrewing.

Man that was painful to deal with, you'd go to walk across water in the cave with the owl bear and because he didn't recognise it as something he had to jump over, he'd just stop in front of it and disconnect himself from your party.

As I recall, yes, but since they are an intelligent undead they get a Will save.

Someone is welcomed to correct me or add to this, of course, but I'm pretty sure that this is how it works.
Pretty sure that is correct, just like turn undead.
