A Paladin has ALL the abilities a Paladin is supposed to have, no matter your subclass choice.
This ain't Path of Exile nor D2 or Grim Dawn.
BUT, there are meaningfull choices you can make at key moments in your progress to make a character that is not like the others, via backgrounds, Feats, gear and spell choices and off course Race.
Normaly there is No concept of retconning your character in DnD, when you made a choice, its definitive.
Now in a more recent DnD book(Tasha's Cauldron of Everything), they introduced a way to "retcon" a character, usually its limited to the subclass and its tied to a quest etc( depending on the DM's decision), not sure if Larian is gonna offer such option in BG3.
Not saying inexperienced players haven't build bad characters at all, but it's comparably rare to other systems. As long as you are willing to read a bit and put some thought into it you'll most likely be fine with whatever you build.
Max level at release is 12, but I agree with the sentiment.

Like if you pumped nothing but Wisdom and Charisma as a Fighter for no reason, or ignored Charisma entirely on a Sorcerer.
They confirmed that Retconning your Class is an option, need to speak to a Specila NPC at camp wich will allow you to remake your choices if you feel like you made a mistake or doesn't like it.

Wonder if it is going to be the old bone-y boy that already offers some services.
Well they just announced you will be able to completely reroll your character ingame so build anyway you want and experiment.
