As far as starting as a goblin, I believe that would create a lot of extra writing and variables into the story line that Larian isn't prepared for or willing to create.
The only people subjected to The Absolute's influence are those with the tadpole. If you wait long enough in the room with Priestess Gut, one of the other goblins comments on how they only hear the voice of The Absolute through her.

Indeed. Those gobbos are just subject to good old fashion tribalism peer pressure brainwashing. Except one. I was really hoping that one would join the camp.
Monster player manuals go back a lot further than 5th edition. It wouldn't be out of the realm of reason for a DM to cherry pick stuff from previous editions, if its all taking place in the Forgotten Realms anyway. Looking at the monster manual for guidance on player controlled characters doesn't really make sense anyway. The monster manual is for enemies, there are other handbooks for adapting monsters as players, and they do happen to include goblinoids.
