i got the idea from watching Puffin Forest on YT. my character was different, nothing like "Ab Serd". . .
Except they are. They're humans, a race who in fantasy media is meant to symbolize diversity and potential for growth. Where as the other fantasy races are more grouped into a particular set of skills, talents and behavior traits which are (almost) universal between their members. Those who deviate from the fantasy stereotype are the exception to the rule, rather than the norm.
Anybody can picture themselves as a human protagonist of the story. Humans can be anything, so anyone can be a human.
Very few people could picture themselves as an Orc, or an Elf, a Dwarf, a Kobold, Goliath, est.
i mean, i know that those folks are all professional voice actors and they don't represent the dnd community as a whole.
but the popularity of half elves makes sense to me.
they likely chose gnomes because gnomes offer a lot of "humorous" personality options, which would give them the chance to do a lot of silly voices. . .
although i have to say, i completely forgot about the goliath race.
now that I think of it, goliath are my favorite race in 5e.
my pnp bearbarian was a goliath.
they should have goliaths in this game.
Of course, I would love to see all of the various options put in the game, but if i had to pick between goliath and gnome, goliaths would win.
and i looked online, apparently they don't have dragonborns in this, but they have aasimar and githyanki.
I have never played as a githyanki except for that one companion from planescape torment. If i play this, i'll probably have a githyanki in my party

Dragonborn aren't in the game, YET, but they will be eventually. They're a core race in the PHB, and Larian has confirmed all the playable options from the PHB will be in the game at full release.
I don't know who told you Aasimar were in this game, but they're not currently playable right now. They are also not a core race, either. So I can only presume that if they do get added, it's in response to the fact Tieflings are in, and they wanted players to have the upper planes counterpart to them.

Like, playing a Dwarven Mage is about as minmax as playing an Orc Sorcerer. Neither race is particularly 'good at Arcane magic'. Not too shabby on the Divine side of things, but that's not the point.
You don't see many fat elves, or fat half-elves. Or thin dwarves. Or buff halflings.
*Individuals* might be like that, but the races themselves aren't, traditionally.
Gnomes don't have this stigma. Gnomes are a blank slate AND a mish-mash of leftover tropes.
Mazzy Fenton (Halfling Paladin) stood out for a reason. Jan Jansen (Gnome Inventor/Illusionist) - a MUCH weirder character - didn't stand out at all. Because *'Gnome'*.
Gnomes, much like humans, work in ANY setting. A Halfling cybermage/technomancer/whatever would be weird/unique, but not a Gnome one.
Gnomes are an ideal progression for people that want to branch out and play something other than Human, but don't want to deal with fantasy tropes (which includes 'subverting the tropes').
Ultimately, as with everything else in life, there as many answers as there are people on Earth.
But I'm pretty sure the answer to OPs question is 'Because some people like the aesthetics of them, or because it fits their personal playstyle, or perhaps a mixture of both of these reasons.'
If you saw a 'slim' Dwarf, you should probably call a doctor for them immediately. It's explained in lore that the reason why Dwarves are so broad, is because of how compact their muscle mass is. That's how they can be only 4 feet tall, and exert the same level of brute strength as a full grown human.
As for not being particularly good at magic, the whole premise of being a Sorcerer, is that you have a natural talent for magic. Charisma is their casting stat, because it stems from their force of personality, rather than years of intellectual study.
Sorcerers don't need material components for their spells, as their power comes directly from their bloodline, which was mingled with various kinds of magical creatures, most commonly that of Dragons.
Duergar have the magical ability to grow to Large size.
Considering the Dwarven ancestral rivalry with Giants, I'm not even sure the Duergar deserve to call themselves Dwarves anymore!
um. . google told me assimar were in the game. . .
it also says something called a "mephistopholes" is in the game as well.
i thought like "wtf is that? is it like the opposite of the assimar? half devil as opposed to half angel? because Mephistopholes is a devil?"
but then somewhere else says it a tiefling subrace. i never heard of that subrace, but then again, i was unaware that there even were tiefling subraces. i guess that's from one of the newer books? i haven't played since Volo's guide came out.
. tieflings are half demon and D&D makes a distinction between devil and demons. devils come from the 9 hecks and are ruled by asmodeus and baalzebul, while demons come from the abyss and have such fiends as Demogorgon, not The Demogorgon(of Stranger Things fame), just Demogorgon.
unless maybe he's a celebrity now because of thr tv show, like Cher or something.
you might be lwalking through the 666 layers of the abyss and bump into him and then be like "what? Demogorgon? you mean "The" Demogorgon?! OMG, i'm such a big fan! can i haz your autograph?"
