Can you try (as EG says) turning everything down to minimum settings, and the resolution down to something tiny- like 800x600- and see if it improves at all?
Would you mind following some instructions in a YouTube video and seeing if there's any error output in the console?

I honestly don't understand what's going on besides the bunch of unknown Java commands in the console log.

Otherwise, you could make a partition or you could emulate the Windows version with Wine, which could help or could make it worse.
It's possible the OpenGL implementation for that graphics card on OS X just aren't as good as the Windows ones, but that would be unusual- it's typically the other way around.
