Also make sure that you have a friend to check whether it shows up on the server list, since the main host PC cannot see its own server sometimes.
I'll next get a friend to try and see if they can see the server, but i am using two separate machines (one to host and one to play) and the server doesn't show up on the LAN tab of the steam server list either?
Turns out it was the router all along, although the ports were being forwarded the routers UPnP function was interfering. As soon as i'd turned that off the server appear on the in-game menu.
