The monsters you're thinking of are probably bears, moose, or a pack of wolves.
Being able to craft snares, pit traps and bear traps would probably be necessary. I guess a pit trap would need a shovel, some wooden spikes, and a board to serve as a cover.
Not sure about how to craft snares and bear traps. Maybe find them in warehouses, or such.
