Because people have been asking for it. It's a mod. If it's not your cup of tea, that's understandable.

It might sound foreign but a bloodless game makes it easier to present the game to a kid as a parent, even if the theme itself is still violent.
Others just don't want to see it. This mod is simply an option that does no harm to anyone.
