Honestly the best difficulty reliever is the sand box options though. Tweak it how you want and find your own balance before you start getting into heavy modding.
Well, unless you are the kind of person that panic, then nothing can really help you. The game is already slow and zombies always do the same thing so there is absolutely no need to panic.
If you haven't, I would suggest simply watching some short & detailed video that explain in details some mechanics like (don't watch if they just tell stuff and don't show they tested it):
stomping
hitting the head of a downed z
fence fighting (or window + cabinet)
what's the best direction to split or group zombie following you (north/south work differently than east/west)
how zombies "remember" your position after they stop seeing you, and how to use that to force a zombie (or 100 of them) to forget about you with little effort (hint : house corner, fence, windows)
how stealth work (crouching doesn't change their vision of you, it just change the sound you make)
how crit and weapon damage work with moodle (when you need to sleep and/or rest your damage greatly drop and your crit chance drop a bit, so some weapon like spear shine when you are in bad condition)
how how far a zombie is from you affect your damage (the further away, the more damage you do; hitting at minimum range mean reduce damage)
how to push down a zombie with a weapon in hand but not use it's durability
how to get your skill up faster & safer
how trait works (some don't do what you think, some help while giving you point to spend on other trait) with the goal to make a strong start
how to exploit car durability to kill Z
how to fish (most easy and safe way to get infinite food by using free spear)
how to drink water from a tainted source
how corpse sickness work (getting sick from nearby corpse)
how health/injury work (never change or remove your bandage, don't disinfect, etc)
how armor work (no need to go into extreme detail because it's a huge mess by itself, especially if you carry a weapon like an axe and level up weapon skill)
learn how to level up tailoring and get and easy +10% bite protection on your clothing
how zombie spawn in building (they don't unless you get something like <10 tile from a visible tile inside the building and could spawn right in front of the door you open if you don't first see a tile inside)
maybe how to sprint/dash trough horde

Any mod that show your endurance will greatly help you learning when you should retreat and sit for a bit.
There is a few mod that allow you to get infected and cure yourself after. Could be either by forcing you to craft it, loot it from a rare z, or remove the infected part, depending on the mod involved. It's more for longer run, to allow you make a few mistakes instead of simply removing the infection.
A mod that would increase your carry weight could also help you. Plenty of way to go about this; some let you find pocket you can sew on your backpack and fanny pack to make them better. Some give you better new backpack, some edit current backpack and make them better. Some add more smaller bag that stack with the backpack. You could also have a straight up free bonus carry weight.
I suggest you check yourself what you could fancy in the workshop, just use a few keyword and sort by popularity. also, CHECK THE DATE OF THE MOD. If it's somewhat old (<2023) read some message and see if people complain because it doesn't work anymore.

if you have not tried changing those then it is probably too early to experiment with mods - since while there are plenty of QoL mods and mods that change how some of the systems work - the game has a built in system to configure its difficulty - so i would suggest playing around with that first
e.g. go to Custom Sandbox and select the Initial Infection preset - then go to the Character tab and set Rear Vulnerability to Low and enable Multi Hit
You will then have a game with a smaller number of weaker zombies, that don't hand around in big groups, and that you can hit multiple of with a melee weapon, and which are less likely to bite your neck from behind - and there will be loads of loot in the world - the cars will have fuel - and your character will level quicker
this should help you learn the systems and get used to combat
you can then increase the difficulty by small amounts - maybe increase the zombie count, or group size, or multiplier, or strength - or reduce the loot - or any of the other settings
there are also Custom Sandbox presets for all the main modes, as well as a few others - anything highlighted in yellow is different to the Apocalypse default settings
you can also save your own presets
hopefully that will help
(there is also a mod that lets you change many of the sandbox settings during a game)

just turn off the nutrition system and the game will become 100X easier.
