Even clay is still hard to find at the moment. Considering the amount required to make things with it, I assume there should be patches of clay you can harvest from. And haven't seen any of them yet.
As for iron ore, I haven't gotten into metalworking yet, but I don't think I heard anything about mining being a thing in this update. That being said, I don't think it will be a problem if there is no mining. There is a ton of metal to use on the map already. You can take apart cars for parts, metal furniture like industrial kitchens, etc. Again, haven't played with metalworking yet, but I imagine that's intended to be your main source of metal resources, along with raiding industrial areas.
