I usually run around with a Big Hiking Bag on my back, a Big Hiking Bag in my secondary, and a frying pan in my main hand.
I play solo and I like to run prepared =p
If I'm out in the open where I have full 360 degrees of possible vision, I'll use a frying pan, more than enough to dispatch a following of about 6-10 zombies easily, and with effort up to 15 maybe more, never got really had to fight that many at a time.
If I'm indoors and turning around corners, etc, I keep my knife armed because a jawstab is the quickest defense when caught unaware.
I can see how a two handed weapon can be valuable asset to you but it's a pain to have to make multiple trips to get what you want and the frying pan/knife setup works wonders for me.
