For those with Calorie problems...
important facts:

The hunger moodles are separate to calorie management.
(eg. you can be on -2200 calories, and still satisfy your hunger moodles when they appear)

the default time is 1 hour = 24 hours. since the calorie burn are key'd to passage of time (and also activity levels), you can't do much in realtime before in-game time rushes ahead. ie. you burn a lot of calories on the smallest of tasks, so you are able to accomplish very little for the calories burn, due to in-game time passing so quickly.

Solutions:

if you adjust the time to eg. 4 hours = 24 hours, you will notice a dramatic shift, not only in how much you can accomplish each day, but also how frequently the hunger moodle appears, and how fast your calories burn.

there is a mod called minimal display. consider playing with it for the calories bar so you can get an idea of how fast your calories are burning, and which foods affect it the most.

try playing with the nutrition trait to be able to read the fat content of foods. fat affects your calories far more.

and finally maybe take the slow metabolism trait. you start off with a bunch of negatives but they are all temporary (the -1 fitness can be earned back which will remove the 'out of shape' trait, and 'high weight' trait will vanish once your weight drops to 85 or below). But once they are gone you will retain your sensitivity to fat, which makes it that you gain weight faster off less fats, something like that, so its easier to manage your weight.

The problem seems to be that walking is burning more calories than running. There's a mod that fixes it.

you could apply that mod too. but it won't change your experience of being in calorie deficit that much. you still need to pay attention to the other points. it really is about fat content of food, and keeping an eye on your calorie meter, to help better understand why merely eating when the hunger moodle comes up is not enough.

i used Minimal Display Bars and help a lot (feels a lil cheaty when we speak about survival real time) but thanks to this, seing this feature is pretty hide from the user.

When u walk the calories bar it dosen't move to much, when u run its drain very fast. Funny like real life? maybe.

To gain Weight need to be full or almost. To keep the actual Weight need to be stay in 50% or bit more. Less than it you start to loss weight.
