Would be a funny easter egg.
Just because you're inflicted with a madness/rage inducing virus does not mean your human body suddenly becomes immune to the laws of thermodynamics or basic human biology.
Within 3 days, pretty much all zombies infected to that prior point would start dying due to lack of hydration. Their muscles would seize up and convulse due to no water to moderate salt levels or to generally stay alive.
And as you go down the chain, no food intake, open wounds getting infected, being exposed to the elements, standing out in blizzards for months, etc.
You realize how insane it is. Just because your brain is infected by a virus and very much wants to kill everything around it at a slow pace doesn't mean you're not going to die from everything else.
So chalk it up to "funny bideo game with zombies" and suspend your sense of reality for it if you want to have fun, lol.
Zombies aren't real, so by default there can be no 'scientific' explanation as to why they don't eat or drink. It's not supposed to be realistic.
That being said, I have always wanted to see a zombie movie/game that actually depicts these things, it would be a facinating scene to see zombies eating animals/other zombies, or hundreds gathering around fountains to sit face down drinking the water.
but in the end its a pretty bad idea regarding how fun that would be.
