the great thing about Project Zomboid is: it is a sandbox. It is entirely up to you whether you just want to use X or Y or Z. Like with Minecraft you can enjoy the game fully with zero mods.
Just keep in mind when using mods: the more mods you use, the higher the risk things can break on the long run due to incompatibilities. Hence make sure to work proper with backups and checking compatibilities, while knowing the mods you are using.
As long as you follow the rules for safe modding, you can use as many mods as you like.

Braven's mods have a good balance which make them almost indistinguishable from the vanilla content once installed. They pay also great attention to compatibility, making their mods easy to recommend for everyone.
By the end of the day: it is recommended to use as many mods as you want, and as you need to make the game enjoyable. It starts with zero and ends who knows when. I think one person wrote they had almost 400 mods. Kinda unimaginable for me, but not unrealistic.
It's one of the reasons I can't wait for B42, because it'll be the first time in many many years I'll play vanilla and with 0 mods. Only way to know what mods I'll need with the new version is to play it vanilla for a while.
Cars and weapons usually take up the bulk of any mod list I've played and servers I've played in.
