Obviously this game couldnt work in FP, but if a game with depth of Project Zomboid was in First Person with realistic graphics it would be immersive af.
Only similar game is 7 days to die, and its not that good in many many ways.
Performance, Graphical Fidelity/Quality, Depth of gameplay

Want performance and depth of gameplay? It isn't going to look good.
Want graphical fidelity/quality and performance? There isn't going to be as much to the gameplay.
Want gameplay and graphical fidelity/quality? It's not going to perform well on weaker machines, and even higher end ones will need to be well tuned to do well.
Plus, if it were first person, You'd lose alot of the feel of the game, and a lot of awareness of the world around you which you desperately need in this game to be able to not get rekt by the zombies.
As for awareness, very detailed spatial sound would be one of the options.
