RPG games with mechanics like project zomboid
Are there any rpgs that have mechanics as fleshed out as project zomboid? (besides bg3 maybe)

I would recommend Cataclysm Dark Days Ahead and or Cataclysm Bright Nights. To put it simply the games are the same (generally) but they are different forks, CDDA is more complex, focused on realism, and much harder while CBN is more focused on fun and screwing around and goes into sci-fi/cyberpunk elements, but it will still take some time to learn. It has quite the learning curve, but the longer you dedicate yourself to it the more you'll understand it. It is a traditional roguelike, though you can make it not turnbased if you'd like. You can get them both free online, though there is a Steam Version of DDA that costs money (though you don't need to pay for it, you can't get experimental versions on Steam).

Define "fleshed out" maybe?
Do you mean having so many details like having hunger meter, fatigue, and stuff?

Maybe try Darkest Dungeon, Fear and Hunger, Albion Online, or Palworld?
I feel like these games have in-depth features enough they are still RPG games and not simulation/survival games like PZ.

Exactly. My list is as follows:

1. The Elder Scrolls series: Oblivion (my personal favourite), Skyrim, Daggerfall (Unity version, Daggerfall and its Unity versions are free), Morrowind. Not as complex as they could possibly get but you didn't define what you mean. Besides, each TES game: II, III, IV, V, is quite different from each other and may give you an interesting idea how the series changed over time, from 1994 (Daggerfall's release date, if I remember the number correctly) to 2011 (Skyrim's first release, if I remember correctly the year).

2. Become a Legend mode in Pro Evolution Soccer 2018 and 2016 (yes, this IS an RPG... in a sense... couldn't help pointing this out). Basically, PES 2010, 2016, and 2018 had good football player development system, so...

3. Evolution GT: it's a racing game with RPG mechanics and Tiger Effect (literally time travel up to a few seconds backwards and thus "seeing/knowing the future" while correcting your mistakes) but it has frustrating difficulty level and difficulty spikes (I play this game on keyboard only but I assume driving with a wheel may make some events easier to win). A decent/okay game but nowhere as good as TES or PES.

4. (I haven't played this one [yet]): Deus Ex (the first one and the original one, an old game). I heard it was a total gem of a game in its time and possibly can still be great to play nowadays.

5. (Haven't played this one as well): Fallout 2.

Besides, this game is more of a sandbox survival rather than a "proper" RPG (in a more "traditional" sense). But it fits the RPG flavour just as much as TES, PES, and even that Evolution GT.

The Sims
Paradoxically, this is an RPG too... a life sim... in that sense, Dwarf Fortress Adventure mode also fits the RPG, even extremely well because of the insane details of everything. And with mods/scripts coming with the LNP you can build your own entire ANYTHING as an Adventurer, or an entire group of them. It is possible to utilise a lot of mechanics from the fort mode in adventurer mode, which includes mining, smithing, water and lava physics (including using pumps to pump liquids), building (setting traps included, I even once entered my own trap by accident and wounded myself because I forgot I placed it and it properly didn't show up because they remain hidden unless detected), and much more.

Edit: Spore would also fit a loose definition of a sandbox RPG.

Underrail is a solid indie gem. Seriously friggin A:)
Stellar Tactics has been on my radar for a while, and i totally bought another game as i confused themXD A bit similar to Stellar Tactics is Space haven, though not as fleshed out with the graphics and the RPG system.

I haven't played this yet but its on my WL after seeing someone playing it recently. It kinda gave me some Zomboid vibes but it switches to turn based when in combat and doesn't have the line of sight mechanics of PZ. Worth a look though maybe.

Well it is more like a movement/action point of combat really. As in while you do not do a thing the enemy does neither:)
Let us say you move five points, the enemy depending on some stats will also move a certain points, or if it has a ranged attack will perform a ranged attack. The cooldowns are also based upon such.
It is also a good game. A bit rough around the edges here and there, but those that made managed to put together quite the game. Especially some of the "traps" are good logical puzzles. I never got out of the forest though which is the first chapter, so it is quite big game:)

also as some other users mentioned, cdda and kenshi are pretty good and have very complex mechanics.

Dark Souls is not an RPG game though it is more like an agility type of hack and slash as far as i know. (I have a few friends who are avid fans of the title. Personally such games are not for me:D)

I would suggest to try out Arcanum for the original poster.
Is one of the best cRPG-s ever made imho.
