What is actually different about survivor mode?
Primarily in comparison with apocalypse mode.
I am thinking about switching, because the short zombie respawn times kinda piss me off in apocalypse mode.

edit: only thing that massively impacts gameplay is zombie strength, since if you have a character preset with low strength, the roll to instakill you is increased. Having high strength reduces the chance, but normal strength zombies aren't that strong, you'd have to be a wimp to get dragged down by 1. Of course, the chance is notably higher if they get you from behind.

I'm not sure. I've never played either one. I always play on sandbox because I have a specific preference on the settings. I believe survival mode is suppose to be harder and more of a challenge while Builder mode is more relaxing and focused more on building rather than survival

I suggest trying sandbox mode. Disable respawn, only bites, and adding a bit more time before water and power shut down.

Go into Sandbox, and the settings for Apocalyse and Survival will be the first two in the drop down. Essentially it's just multi-hit and a few other tweaks though. Most of it is the same

open the sandbox settings. from there you can look at the presets for each difficulty (apoc, surviv, build) and see what the actual differences are
Apoc is the hardest so if you switch to survivor it should be easier
