2: You should be able to add them with "Add an available map to the list" and if your map/spawn location doesn't show up there, you might need to add the maps mod/workshop item in the Steam Workshop tab.
3: The difference between the Workshop and Mods options is first, you want to enable all of your mods from the Workshop, and then if any of your mods have sub-mods they should be automatically enabled and you can go turn them on/off to your liking there, for example the More Traits mod has "Disable Prepared/Specialization Traits" and "Dynamic Traits" which are sub mods that affect the main More Traits mod. And the second difference is if you enable all of your mods in the Mods tab, they won't work unless you turn their parent/main mod or the mod itself on in the Steam Workshop tab, but no mods or submods will work unless the mod (or parent/main mod for submods) is enabled in Steam Workshop.
