Run (sprint) to level your sprinting up.
Install the Minimal Display Bars mod, and watch your levels. If you go into any exhaustion, it lowers your damage and starts to make your Fatigue go up faster.
Basically manage your Endurance so you keep it above any Exertion Moodle appearing. Sit and read for a bit until you're back to full. If you're near an object you can Rest at, Rest then Sit on the ground, it will increase the speed you recover at.
