What do you do if you don't level carpentry?
So I can't build a rain collector barrel, is there any other way to get water or am I just going to have to go from house to house getting water

You can boil water from the rain, lakes or rivers.

There are also a handful of wells in specific places which have infinite clean water for you to use.

You can place mugs, cups, pots, pans outside and if it rains, they'll fill up with water which you then can boil and drink.

Look for water dispensers around buildings. You can refill them quickly by using watering cans.

You can REFILL the water dispensers? Why haven't I thought of that?

You can find prebuilt rainwater barrels around the game world such as the police horse training place in Louisville, although you probably need Carpentry levels to pick those up.

You can also find five metal barrels in the Louisville entrance with all the tents, once you empty out the logs they become water collectors that can hold twice as much as the 7 Carpentry rainwater barrels...and they don't require Carpentry to move.

Otherwise try settling near a well or get used to boiling tainted water you collect from ponds or rivers, or by leaving cooking pots, watering cans, buckets and other containers outside to collect rain water.

Take a hammer, saw, and screwdriver and start deconstructing everything in the houses. Alternatively drive to Rosewood and grab the two rain collectors in the fishing store.

Yeah
Collect cooking pot and bucket a few dozen of them. Tumblers, mugs, bowls, these all fill with rain water. Wine glass. Saucepan etc

There are collector barrels in locations across the map you can pick up and take home. Very large metal ones at the Louisville checkpoint, you just have to take the wood out of the drums. A solo playthrough will have no problem from that point on.

If you are desperate you don't even need level 7. Level 7 is convenient but lvl 4 is enough, you can even easily grind trough lvl 1-4 with no vhs, but carpentry has so many vhs spawns that it doesn't even matter, just make sure to at least find carpentry books 1-2.

I grab and use them regardless of rain barrels. More water storage is never bad, and they look nice.

Constantly traveling or switching the house you live in is also an option, as there is always some water left over. Especially hotels will last a long time.

You can even put a water dispenser into your car and either exchange it or fill it with cooked water from a camp fire at a sea/river from time to time :)
Or fill a hundred bottles / pots.

You can also put a hundred pots and buckets onto the ground to use them as rain collectors!
Just makes washing a rarity.
