Is it true that you can keep your progress once you die?
I mean, all the structures an loot that you had at the moment to die kept in the game's world when your start with another character. Is this real? I usually get frustrated with games where you lose all your progress once you die (Don't Starve, for example).

There are mods that allow you to keep your skills when you die

If you load into the same save game with a new character, then yes all the progress you did on that save will stay.

Yes, you can choose to simply create a new pawn on the existing world.
There are also mods out there (Recovery Journal as an example) that allow you to "save" your Skills, if you so choose

Everything in the world stays the same, the only thing that disappears when you die are your character stats that you have improved

if you die you can continue in that world with a new character. all structures etc. and loot stays on your (zombified) corpse.

Do I have to kill my old character to get my loot back?

everything you had on your character will stay on the dead body (or zombie, if reanimated, depends on the cause of death), only the stuff you had equipped in your hands (weapon for example) will drop on the ground on the place you died.

No. This is not CS:GO. The only thing you can do that feels similar to that is to find a stranger in the community and host a private server together.

Or, you can check forum posts, discord and YouTube.
There are quite few servers hosted by community's out there to try. Some YouTubers have private, white listed or patrion servers too.

But, remember that server side mods and your mods will need to match if you play multiplayer and modded together (and most servers are modded, from what I can tell)

As somone else mentioned, there's also a Skill jounral MOD that you can get, that allows you to write your current skills into a journal, so that when you read it on a new character, you gain the skills. I thought that was an interesting idea, haven't tried it yet myself though

This is something i wish for too :( easier matchmaking.

Yes. But you lose all the skill progression of your first character. You can find them after they've been zombified and either capture as a pet or kill and loot to get their equipment. I usually last a month until I do something dumb and get zoided. The remorse and grief prevents me from coming back to the game for awhile. But the adrenaline rush that you get from dying after a long run is nothing to be scoffed at.

I once made it a month plus in the Northern end of the map. Had everything I needed but got greedy going to the army surplus store. Eventually got blocked off on a highway between me, a massive horde, and home. No way the vehicle would make it past the blob, and I ruined or missed my molotovs to thin the mass. I tried driving through it, but was slowed down in dirt, and had to make a run for it. By this time there were so many zoids around me, my vehicle, and my path home. The woods were crawling with them and there was no way out. Kind of wish the game had a suicide option. I died regardless. I was eaten alive. There were hundreds.
