Deal with it ?
You can't really tell from the screenie, but there are two techniques that I've tried:
1) Front of fort .. see low fence around the sheet rope exit area
Seems to buy you a bit of extra time, but doesn't actually deter the zombies .. they'll climb the fence to get at the rope.
2) to the east & west side of the forts you'll see little shed-type structures about 4-6 squares .. kinda like a toilet cubicle attached to the wall ...
What I've tried is a little maze at the exit point so zombies will eat the walls instead of the ropes, and it seems to work .. and log walls are a good choice because of nail scarcity .. zombies seem to chomp on the wall.
Kinda like this:
-----SHEET ROPE---- .........<-- meaning this is your windowed wall
I.... _____________I ........ <--- the lines represent walls you build
I_____________ .... I .........<-- creating a little mini zombie maze
/\ zombies mill around here /\
Hope the above makes sense, but yeah they seem to munch the wall rather than navigate the maze to get at my emergency exits.
I can't abide doors in my fort, they get eaten down too fast no matter how well barricaded, so above solution is a good alternative for me so far.

Without a solution, you could get stuck outside unable to re-enter your home base, unable to build stairs or anything to get back in .. I've found even with 6 sheet rope exits, small groups of zombies will tear down even 4 of them while I go out scavenging for a day .. but above solution seems to deter them long enough that a dailiy purge takes care of the problem.

If you wanted to de-emphasise ropes, do some balance work to make doors, buttressing and barricading more realistic, I guess.
Still, the game is as it is, it is the universe in which we live, and you have to respect that .. so therefore my answer "pheromones" stands.
And it's mainly to avoid everyone destroying stairs and thinking "ok, i'm all safe", no, i don't want anyone to be safe... :D
First of all i agree with you, but the other point is that now carpentary will get his op function back.
I played enough online hours to say, that the ability to create new stairs is op, when i left my base (because i did other things like work), i just removed the ropes. now you try to balance the rope, what is a good idea, but it only end in "i need a high level for carpentary".
I mean, who would ever use a sheet rope to move a fridge or oven?
