If you enjoy PZ, go play The long Dark. It's the same kind of ruthless unbending experience. The atmosphere is more contemplative but the game has received so many updates I'd say the map size is comparable and the exploration factor's the same.
I absolutely love the Long Dark but the game doesn't accommodate slower playstyle. Meaning that I'm just not fit to play it. You need to always keep going so if you're a nomad style player you'll love it. Building a base in TLD is usually not a good way to go.
Subnautica
There's also Subnautica which offers a very unusual experience. Not many games takes place in a sea environment. It's a great experience too. The best part of the game is the exploration (big focus on that) as the story slowly unfold in the background slowly pushing you to explore more and more to go on. The base building aspect of the game, while they added a lot to it, really takes a back seat. You can ignore it and it won't matter. You can spend a ton of time on it and it won't matter either. The base only helps you store extra stuff.
If you want the best experience in the current Subnautica state I would humbly suggest you build a temporary functional base and as soon as you can you build the submarine. It'll take a bit of time and some exploration but then once you have it it becomes your mobile base and don't worry it's not OP. You'll have to maintain it and manage the downsides and all but it's all worth it. Also, it doesn't overshadow the others available options. It's just very practical as a mobile base that you can park somewhere while you do other stuff.
Unfortunately, I wouldn't recommend Below Zero. While I think the new visuals and added things to explore / discover would be fun I feel that the devs have pandered too much to the SJW crowds through a few things.... and the game feels very different too. Anyway, judge that for yourself, you can go see the steam reviews and watch the game footage.
That's what I was thinking. If PZ had bears, wolfs etc. I would be playing it without zombies.

I'm playing The Long Dark and it's probably the closest I got from a "bushcraft" experience in games. Among Trees was interesting as well, but "casual survival" compared to it.
I just remembered... you might like Sunless Sea & Sunless Skies. There's nowhere near similar but again it's more of an experience than a game per say. It's extremely immersive though and the lore is just incredible. It's as deep as you would find if you were to read the Harry Potter books. You can lose yourself for hours in those two games.
