Custom Sandbox settings -> presets at the bottom -> Initial Infection
it has fewer, weaker zombies - more loot - faster XP gains - starting gear (bag, bat, hammer, water bottle)
i would also suggest setting the following 2 settings in the Character tab: enable Multi Hit (allows non stabbing melee weapons to strike multiple zombies), and set Rear Vulnerability to Low (less chance of getting bitten from behind)
this should be a relatively chilled mode in which to learn the game before you try the harder presets - while also still being possible to get surprised or cornered by zombies and dying
i should note that all 3 default presets (Apocalypse, Survivor, Builder), plus a bunch of others, are available in the Custom Sandbox presets - and all of the settings which are different from the main default mode (Apocalypse) will be highlighted in yellow
you can also save your own presets
i would also suggest the two changes i mentioned for all your games - especially multi hit - i would also note that they are 2 out of the 4 differences between Survivor and Apocalypse - the other 2 being zombies inflicting less damage (strength set to weak), and not dragging you down if they surround you (with Survivor being the one which has these differences, making it less hardcore than Apocalypse)
last note - Initial Infection does have a setting that is different from the main modes (but exists in other presets such as One Week Later and Six Months Later) - which is Environmental Attacks - where zombies will attack doors and windows even if they haven't spotted the player
anyway - the One Week Later preset is a good step up (with the two settings changes i suggested) - lots more zombies and less loot - but still not quite as hardcore as Survivor
and then Survivor is what i play as a hardcore mode, since i like to be able to multi hit zombies - and as i mentioned, the differences between Apocalypse and Survivor are only those 4 settings (but they do mean that combat is way less viable in Apocalypse)
