I'd like to see an option to change the bite infection chance though, makes for more interesting scenarios IMO if you still go through the symptoms but have a non-zero chance of eventually recovering, leaving you paranoid for the time lol

Install "More traits" mod - select Super-Immune - bites won't kill you but it will take some days/weeks to recover from the virus

Cheat menu mod. Heal yourself and/or switch God mode on then off like that other comment said. Not sure if just healing yourself works, but I think it might.

Oh, there are sandbox options and mods to change the gameplay. Mainly commenting on the lack of a 'cure infection' option in debug mode :)

I didn't think of the god mode option. Healing yourself does not work. it treats it just like healing in-game: your wound closes up, but the infection still took hold

Use the cheat menu mod or use the less cheaty like 'They Knew' mod, it gives a certain chance of finding a vaccine.

Oh, I don't WANT a cure! lol. Just noting that even in debug mode it's not a readily accessible option.

Only time I'd use it would be a rage-quit kind of scenario like a glitch causing a zombie to spawn in my bathroom or something

You want to pause the game, cure infection then also heal every part to 100%. The presence of injured parts seem to carry the infection and have to be healed up or they'll just reinfect you. If you're doing this though, you may as well get a mod to edit the scenario settings mid-game and disable infection altogether.
