You guys oughta be restocking constantly. Farm, fish, loot, whatever.
If it's frozen the quality will degrade substantially, but it will never get you sick.
Nonetheless, a freezer isn't a "fill it, forget it" sort of thing. If you want true longterm storage, you've either gotta prepare it or just keep restocking.
There's a reason even freeze-dried foods from wartimes have expiration dates.

Also, there is a middle status when things go from "fresh frozen" to just "frozen". This is time to start making big batches of soups and stews with said items and freezing them, it massively extends the amount of time things last.
Same here, all the veggies/meat I put in the freezer day one are now rotting after 2months in-game. I wish there is a "Realistic freezer"mod that can assure at least 2 years of conservation - but i couldn't find one. Kind a pain in the ass when you play solo
