most of the world map--generally excluding newly added areas as they need to be properly flagged afterward--is divided into various trapping zones. These are FarmLand, TrailerPark, TownZone, Vegetation, Forest, Deep Forest.
There are a wide variety of traps and critters in the game; certain traps catch certain critters, certain critters only spawn in certain areas/within a certain time frame, and only eat certain bait. Some of the combinations are obvious--some are not--so I recommend checking the wiki and committing some of the more conventient ones to memory.
Using the trap is as simple as setting it on the ground by right-clicking (with the trap in your inventory), adding a piece of non-spoiled food to it, and standing at least 75 tiles away /waiting for it to make a hit. Once it's read to be used, it's good to check hack every 30 mins/1 hour or so because they have a durability system and can break if an animal is caged for too long.
Cage traps are generally the best, since they catch squirrels and rabbits at a Hella fast speed, but take 5 wire each to make as well as Trapping 3 + it's respectable magazine so it might take a while to get to that point....unless you're a diehard Park Ranger like me. Stick traps, on the other hand, arent costly at all to make (only 1 twine + 4 sturdy sticks), can be used from Trapping 1 onward, and are generally a good choice early on in the game.
Zombies can smash your traps up, rendering all your efforts useless, so careful placement and prep-work is key. For this reason I find myself not using trap boxes/crates/snares as much since the new, erratic zombie respawn system makes trying to keep them up a real pain in the butt (until you've cordoned off a large area of land from zombie traffic--log walls with plugged-up corners works).
Once you get familiarized with the system, it's quite easy. It's less of a hassle if you utilize it in tandem with farming and cooking but you can get by with one, or neither.
I have a mouse trap. I can place it, and add bait (cheese).
I have tried placing it just outside my short-term "base" (a house in a residential area) about 10-15 ft away.
I have tried about 100 ft away (say, just past the max view distance when I scroll it all the way out).
I have tried it more than 500 ft away 3 houses, 2 roads, away), about 5x the max distance.
Whenever I went to visit it (roughly every 3 hours) in all 3 of those locations, my only options were to remove bait or remove trap. Never any indication anything was caught.
What does catching even look like?
Do I have to place it in an area that has "Forage" as an option when I click the ground?
Any and all help is appreciated.
I am playing in the latest version (the "normal version", no beta opt-in or anything).

As a general rule for traps....if a trap is left untouched after a few days, the place is not valid for this trap
It cannot be placed inside (at least, the option to place never pops up anywhere inside the 3 houses I've attempted - seems to match up with what others have said online as well).
I seem to be very good at finding places that are invalid (despite following the info for the trap found on the wiki, including bait and placement) so if you have a specific placement format or position you've found to work, please share.

Mouse trap - High chance to catch mouse on farms and trailer parks.
Use cheese and butter for non perish. Tomatoes for non perish

Use lettuce or potatoes. Carrots are preferably

Use worms. The rest are too expensive to spend just to catch birds
