Pasta, Rice (both cooked with assorted Beans), Melted Ice Cream, Peanut Butter
Cereal, peanut butter, ice cream, cans of oats, butter, margarine, lard, pasta, rice, dried beans. All non-perishable, all in the 1500-3000 calorie range, many of them will come with a lot of unhappiness so read a book afterwards.
Once you've regulated your weight back up to a healthy range, start including more things like meat and fish in your character's daily diet. Or just keep plenty of snacks on hand to supplement eating like a rabbit.
Eat a whole pasta, and everything in fridge and freezer. Drink a whole orange soda and eat everything you run into.
Especially alcohol
That's what Fishing or Trapping is for.
Fishing is easiest, but Trapping is not bad.
Do you have Cabbage? If not, grow some (or, better yet, Carrots, but Cabbages will suffice)

Set them up 75 tiles away in a Forest area from where you are and where you do not plan to be traveling around. You don't actually have to count 75 tiles, just count 8 times what you believe are 10 tiles (the reason I say 8 is because it's better to play it safe).
For bait, put Cabbage or Carrot.
The next day, after 5 AM and before 9PM, go check the traps, restock any that need bait, and collect your Dead Rabbit(s). Since you're severely underweight, just cook it straight up and eat the entire thing.
This is my current base. The circle represents the area where I set my traps. I loved this area because I can drive to it easily. Forests to the side of a highway are the most convenient spots IMO.

This was my first base. The forest behind my base was empty 99% of the time and I leveled up Foraging quite a bit by making the trip back and forth between that spot.

Food with very high fat content also have similar effect, but it have slower and more prolonged effect as fat converts into calories over time. Cooking with fish can easily get you into gain - just make sure to stop at the right moment.
Just like in RL living off only fruits and veggies isn't actually healthy if done incorrectly. Hopefully with npcs farming with crops and animals becomes way more sustainable food wise. Would be nice if farming had the more calorie dense foods like wheats used in cereal, oats etc.
Basically you want Calories and Fat.
Just be careful to not go overboard or you may find yourself shooting off like a rocket and become very overweight from having too many calories in your system and can't burn them off fast enough
Use them in cooking to stretch the meals
