Rain Collectors on non-flat roofs
Is there a way to do it? Nobody seems to know. I feel like its essential to know if rain collectors can supply sinks eith water through multiple floors or how non-flat roofs work.

Is there a way to supply a sink if its house does not have a flat roof?

(Ofc you can build a little platform on the edge and at least have 3 rain collectors supply the sink is right at the wall, but thats kinda inefficient and difficult)

Have you tried just building a floor tile on the roof tile?
If that doesn't work then maybe a sledgehammer can help to make space for a floor tile.

My first base had a triangle-shaped roof and I just built floor tiles on it.

However, another base I have with a triangle roof (over the kitchen) was weird. Rain Collector Barrels wouldn't collect rain. I had to move the kitchen sink (and the barrels) to another location, so make sure when it's raining that the barrels are actually collecting water.
