The standard cars, 2/4 door sedan car types, have lower skill requirements. You'll be able to pull off more parts without failure quicker. There are some standard vehicles that have lower requirements for certain parts like pulling a seat out of one model requires level 1 while other models require level 2.
I'm not sure if the simple parts like batteries, radios, head/tail lights give skill gain. Start off with tires, you'll have a chance to damage them so try to practice on ones that aren't 100%, less than 80% is what I went for.
I started off swapping parts, like rotating tires. Then went to uninstalling and installing the same part so I didn't have to do the overweight walk. Watch your skill gains I believe you only get the gain the once for removing and installing per part, e.g. you can't pull off the same tire and put it back on repeatedly and become a master mechanic.
I focused on tires until my level matched the required level where I could pull them off without damaging the tires. I hit maybe 2-3 parking lots just doing tires.
After you level up to level 2 or 3 you should be able to do seats, brakes, suspension, windows and doors without failure. This is when the skill gains pick up as you can do more parts without moving around as much. At this point I went back to the first parking lot and remove the tires, brakes, suspension, windows, doors and whatever else matched my level. Rinse and repeat then work your way up to mufflers, windshields, etc.
A few days of doing this should get you to level 6 where you can swap all of the heavy duty vehicle type parts.
I then take turns with a set of whatever level parts I need (e.g. 4 brakes, 4 suspensions, 4 light bulbs) and then do a round robin with the set of parts on each vehicle. Example, install 4 lightbulbs then remove them from one car, then do the same to the next car.
Eventually lightbulbs do not give enough XP, so you move on to other stuff that is your level such as brakes and suspension. Check if it is still giving you xp, otherwise maybe go take a nap and come back for another round or try another set of parts - performance ideally :) - This got me to level 4 in a few hours. Next I think I will look at doing this with heavy-duty vehicles and trucks...
