If you try doing that the game just automatically changes it back to Fast Shamblers at the moment, due to them being disabled due to desync issues or something. At least that's what happened when I tried, anyway.

FWIW, the second mod linked above (Customizable Zombies) has this as its first sentence in description:
"This mod is no longer maintained. I recommend switching to this mod, Random Zombies."

So probably use that one at your own risk.
