Hard to see but is that a divide or a plus sign? (Sorry for the dumb question..) It looks like a plus tho.
so it's 2GB+500MB which is just (2.5GB) of RAM per player if it's the plus sign?
so 8players X 2.5 = 20GBs of RAM needed...

The limit is just the maximum the program is allowed to use before it tries to clean up the memory it's already using.
If you have 8GB, and allocate 8GB, it'll only use as much as it needs, until it hits 8GB used, where it'll try to get rid of anything it doesn't need anymore.
