Do you mean rotten? Because there is no stale status on foods. So if I assume that you mean rotten then nobody can eat those, but it would likely kill a character with weak stomach much faster. However with a level in cooking, you can cook rotten foods making them edible.

stale food give you mood penalty, but they are at least still edible and not rotten yet, so i assume you will survive that.

not sure about the trait "weak stomach", never used it, dont know how bad it can get, maybe with that trait, even perfectly fresh food could have a chance to make you sick?

Okay. Then tell me what you call the state between fresh and rotten?

Yes. You can even eat rotten food. It won't kill you, as long as you don't throw a very weird party.

i was skeptical so i started a 6 months later with iron gut, and my god its amazing. i literally ate like 2 things of rotten ham, rotten salami, some rotten veggies and only then i got nauseous. i sat down as my health dwindled, and it only dropped a quarter before i started healing again.

Well, you do need to be careful, as food poisoning does not raise instantly. It takes some time to reach the maximum, maybe 1-2 in game hours after consumption. So if you keep eating rotten food because nothing bad happened right now, you might actually be able to die.

Might be a bit of an issue with Weak Stomach, you can test it in -debug mode if you want, go into a game world with a Weak Stomach character with the sandbox set to "six months later" and zombies turned off to simplify stuff, then head over to any Gigamart.

Eat some rotten food and watch your sickness. It'll grow significantly but only reach the point where you start taking damage for a little while, like maybe 10% of your maximum health. The same happens if you drink water directly from a river or lake, or from rain puddles. It takes a good six plus hours after this for the full sickness to wear off though - if you drink twice or eat rotten food twice in a short time the damage is even more severe as your sickness will increase to dangerous levels.

Same applies to uncooked food, seemingly. So long as you've not recently gotten sick (I.E from recently eating raw / rotten food), you should be safe to gobble a piece of rotten or raw food, but avoid burned food or water inside containers.

Eat burned food or drink tainted water from a container and you will get extremely sick though, to the point where you'll lose upwards of 50% of your HP and if you eat or drink twice you'll definitely die, unless you have Lemongrass on hand anyway.

No clue if uncooked + rotten food will double up on the sickness either, hitting you both for raw food and rotten. I didn't check if cooked food with multiple food items multiplied your sickness though - I.E eating a roast made of six different pieces of uncooked and rotten meat might apply 6 or even 12 stacks of sickness on you and utterly RAVAGE you, or it might just count as a single hit of sickness which your body can usually resist.

Also I don't know if eating 1/4 or a whole piece of rotten or uncooked food applies the same amount of sickness or not either.

tl;dr though it's safe to eat raw or rotten food even with a Weak Stomach if you're completely healthy and you don't do it more than once every 12 hours or so. Even hucking a rotten uncooked rat you found in a dumpster is safe on a Weak Stomach right now. It might change some day though, trait seems too easy to manage and the amount of sickness a burnt food item gives is insane.

And to answer your main question, stale food that has lost it's (Fresh) suffix is still perfectly fine to eat, your character will just become bored and depressed, not sick.
