A good rule of thumb me and my friends have always followed is having 8GB RAM allocated by default, and then adding 500MB of RAM per additional player (so we run with 10GB RAM, as we have a four player group.)
No idea if that's overkill or what, but these days everyone has so much RAM on their PC that it only feels like a small chunk being tied up by the game etc. We've not encountered any problems or massive loading spikes where you encounter walls of blackness and those cone loading areas etc.
also the mods are the reason, they make it a lot more needy
