What Clothes Offer The Best Protection?
Whenever I watch/read a Tailoring guide they always say use Leather Strips on the best protection clothes but never elaborate further.

I know there's clothes like Leather Jackets and Firefighter Pants but what combo of Clothes offers the best Protection period?

best Protection is the trait keen hearing, a zombie from behind will very likely bite your neck, your max armor on neck is 10% scratch, 0 bite. from the front its mostly your hands, same there, bad protection only.

armor could save you, but its not worth the extra weight imo, just take pants T-shirt and sneakers

if you still want the best armor, firefighter clothing all 3 parts and a bulletproof west

Keen hearing, being able to see a zombie one tile farther behind you and at a cost of 6 points isn't really worth it honestly.

From 3 to 4 tiles is nothing. If you could see 5 or 6 tiles behind, sure maybe. Sometimes thin-skinned is even worth it, especially if you take outdoorsman to negate some things, because armour is so good/important and you'll be relying more-so on armour. Also getting used to spinning while fighting is pretty common and easily done.

I'm pretty sure the military jackets are the best tailorable coats in the game, and have less movement/combat restrictions than leather jackets. For vests, sweater vests are the only ones that can be modified/repaired, but a bulletproof vest still comes out on top even with max tailoring. Sweaters also provide a small amount of armor For shirts, denim is the only one with armor. For pants, military pants or LONG denim shorts provide the best armor for both parts of the legs without restricting movement. Leather gloves are the only armored gloves, and scarves are the only armored neck piece (some coats also provide neck armor, like the ones mentioned above). Military boots provide the best armor and stomp damage. Any hard helmet provides the same armor level. And this doesn't provide armor, but a shells ammo strap is useful for shotguns/maybe revolvers to improve reloading. Put together, you have the best armored items in the game. I'm pretty sure you can also add patches to unarmored clothes like vests and shirts to max out armor even further, too.

Keen hearing is invaluable. Being able to see zeds behind you sooner makes kiting in zombie-infested areas much sooner. Furthermore, the actual audio increase to zombie noises is super useful for getting a proper read on what's around the area.

I just tested it with debug mode like 10 days ago. I'll have to take a look again, maybe a recent patch changed it?

keen hearing also increases your audio range.
being able to hear them banging windows or doors from 3 tiles further or a sneaky player creeping around can be the difference between life and death

The problem with the firefighter coat is that it can't be repaired/modified, it heavily restricts movement and combat speed, and its insulation is very high which causes overheating fast.

Actually, about neck protection, the motorcycle helmet provides 100% both to the head and the neck.
