You can also in the Sandbox options (before starting the game) turn off the probability to be infected by zombies to 0.
Third way is to install some mods from workshop that allows you to create cure for zombification. It's up to you which way is most suitable for you.
I like the suspense after a scratch, but don't feel the need to draw it out for days.
I have played with instant zombie in the past but insta zombie is just too harsh for me.
Always on though. Its a zombie game after all.
I think it is super cool the Developers give us all the toggles and settings. Everybody plays the game they want.
I could maybe see the point if you wanted to roleplay like a family leaving a shelter one by one to establish a safe place or something after the last one dies, but I feel most people just want permadeath with no restarts.
