try find a bar for bourbon's, they have 1500 calories.

also you need some meat, trapping or fishing.
if you only try survive with farming you will get underweight over time.
My first playthrough I just kept going by consuming nothing but canned foods, I'd just open one and eat it until I was "Full To Bursting" every time, and my character shot up in terms of weight, I think they might have even become overweight through doing it.
Walking around and not doing too much strenuous stuff probably helps too. My character wasn't moving around much, sure I was looting until I had like 50kg of stuff a lot but I was mostly staying put in a central location, no flights of fancy no major building projects, just spending most of the time moving in a vehicle etc. Just end up way over the 2000 calories while being idle and you'll start to pack on the pounds, just like in real life.
There's probably an exact science behind it that someone else knows regarding perfect manipulation of in game mechanics, but basically tl;dr just eat "All" on canned food and don't do much running and fighting and you'll fatten up in no time.

Most vegetables are crap at calories anyway apart from cabbage (OKish) and potato (mediocre)
To gain weight, you need to eat high calories food (junk food....), mostly the packaged, non renewable food
Chips, chocolate, ice cream, cereal, oath, pasta, rice, alcohol....you get the idea..
A high calories / hunger ratio...with plenty of fat / carbohydrates
This food is very valuable and shouldnt be wasted when not needed
Add in 1/4 by 1/4 to your usual diet until you get the arrow up (or stabilized)
Better to do it just before going to bed
Canned food, apart from some exceptions, is bad at gaining weight
Canned tomatoes are tomatoes...terribad for gaining weight
Same for most canned food
As for renewable high calories food...there is none
It is decent at best

you need basic math to get weight
i am 1.90 and 87 kg in real life its hard to get weight :D you need to eat snacks all the time in game
