Fast growth, high calorie for a vegetable
Potato
Decent calorie, very slow to spoil (great if you havent fridge / freezer)

In my opinion, other vegetables arent worth it to farm
Winter doesn't change a thing for veggies. Cold might slow their growth, might not ; havent looked at the game files in a while, can't remember. Just stay in the water thresholds and you are good. When sowing seeds, look at the water requirements. Or use wiki, it is up to date for this at least.
Veggies that does not like too much water are carrots and radish. You need neither anyways. You can grow them indoors, where you can control water levels.
For drinks, if you have lots of rain and no carpentry skill for rain collectors, use cooking pots. Leave them on the ground. After a couple minutes under the rain, they are filled with tainted water. Cook them to get clean water.
