You have to eat as little calories as possible to go back to normal weight and exercise a lot
Mostly, just eat vegetables and stay on the verge of starvation
Not hard but take longuer than getting weight
Under normal weight traits
Eat as much high calory food as possible until back to normal weight
Chips, chocoiate, sodas...
I find it much easier to do than losing weight (like IRL....;D)
My best was 12 days to go from very underweight to normal in extremely rare food setting, usually 15-20 days
If nutrition is disabled, these traits wont change
Losing negayive fitness / strengh traits
Get enough XP to level them back to 4
Quite long and pretty much lock you out of good strengh / fitness (6+) for the whole game
Massive disdvantage when the game is the hardest (the start...)
Getting finess / strengh traits
Level them enough
Very long to incredibly long
