how to preserve food for winter?
So I know you just turn on the generator and use a fridge. But what if you don't have a lot of gas or you are living out in your homemade safe house out in the woods.

Honestly, nowadys, with cars, it is not hard at all

You can do a fuel trip now and then with a car
A car can carry quite a lot of full gas cans (seats + trunk...)
The more gas cans you have (full or empty), the better
Just have a generator ready in a gas station and voila....infinite fuel for when you need it

Or. much more convenient, just live in a gas station
Infinite fuel for all your needs without the fuel trip chore

so no other ways of preserving food? I don't really like cheesing games if i don't have to.

Its not so much cheesing as it is the factor that, It would take years for a sole consumer to burn through the amount of fuel stored in even a small Gas station.

However I agree alternatives to refrigeration would be nice if a little in depth. Smoke curing & salting, pickeling or any other form of traditional preservative would be interesting to see.

I suspect this kind of stuff will be the domain of modders like Hydrocraft though as it could quickly get quite involved.

I dont see any cheesing by using a gas station, but that is me ;D
This is exactly the purpose of a gas station....storing huge amount of fuel, which is (almost) infinite for a single user

Otherwise, no real way to preserve food
Making canned food depends on limited and rare items, so, it isnt really usable in the long run

I am doing this myself. I have lots of canning materials but there are no lids. Any jar has a lid, eat peanut butter theres a jar and lid. i have canned 12 jars of 5 cabbages. all the lids i have found so far. need to make peanut butter jars reusable. and marinara jars. other wise i have 2 popsicle freezers and 4 little house freezers. cooking is going way up fast also.
