Barrier and Overload Champions are both more likely to stand off and shoot. Also, Eliksni Servitors can be champions too (usually Barrier Champions), they tend to not even attack (at least not much), they just protect the mobs near them.
Point is, every season has them, and every season has different Anti-Champion mods. The objective is to create a shifting Meta that requires different weapons and strategies from season to season.
But yes, they're always annoying.
Me personally for Legend or higher difficulties i'd mix in different mobs in there. Like an ogre shooting non stop protected by that vex type making him immune, with some cabal that runs in front laughing and puts up his shield. Only way to get thru would be throwing a nade or something at the one doing the protecting. Or stealth with a hunter to go around , things like that. Make it about skills, or just being clever.
The comment about plenty of things to do to make those champions non-existent means you are doing everything in order to get all your buffs up to take it out, that's not freedom.
Might as well put in a convention of elements like Diablo so that we can only burst damage every 12 seconds while they are at it. When i see people stacking buffs saying omg best build ever, all i see is a convention of element mechanic.
You need all your buffs to freeze them with chill clip or Stasis subclass or electrify them with Voltshot or get radiant?
There are also a plenty of exotic weapons with anti champion built in and a few exotic armor that grants anti champion effects.
All Chill Clip fusions (as of S20):
Riptide- Crucible (Easy to farm for, very accessible)
Deliverance- Vow Of The Disciple (Can be crafted)
Aurvandil- Gunsmith (Even more accessible than Riptide, and can get reconstruction)
Burden Of Guilt- Trials (Worst of the bunch for PvE, but it's there)
