Cross-play is what lets you play with people from other platforms.
Cross-save lets you share a set of characters to your other accounts.
First things first,
Do you have cross-save active? If not, then that part is no problem.
You can unlink accounts using Settings, 'Account Linking'. However, you can't unlink the account you used to authenticate that session. For example if you logged in using your Steam credentials, you can't unlink Steam.
Do you have any linked accounts? If you have Epic, PSN, etc, linked, you need to log into one of those and unlink Steam using the above method.
If Steam is your only account, (while I'm not sure what your end/expected goal is for all this), you'd need to create a dummy Epic account or something, link that, and then detach your Steam account. What's the ultimate point of this, what do you think it's going to do for you?
Please note that while Cross-Save is enabled, you cannot unlink accounts; you must disable Cross-Save in order to unlink an account. Doing so will impose a 90-day security lockout from reenabling Cross-Save.

You can't remove your primary account (as opposed to the account you used to login which isn't necessarily the same, houg it would make a degree of sense that you also can't unlink the account you're currently logging in from) from crossave, so if all you have linked is Steam then just adding another platform won't work.
I have Epic linked but do not have cross-save set up - did that for the emblems they released. If I log into my Bungie account with my Epic credentials, then it will let me unlink my Steam account, which is my actual game account with my characters and gameplay, etc. Logging back into Steam would then generate a new Bungie account.
OP could do this to remove their Steam.
I see people do this on Bungie.net because they heard it can give them a new name change, and then they lose all their Bungie code-redeemed emblems that way due to separating their game account from their original Bungie profile.
