Additionally for the time being, you have access to Beyond Light, The Witch Queen and Shadowkeep. I would highly recommend getting Xenophage from the post Shadowkeep campaign quest, Lament from the post Beyond Light campaign quest, and Parasite from the post Witch Queen campaign quest. You will retain access to these exotics even after the Final Shape launches.
Weapons and cosmetics don't "expire", but they do become much less obtainable after the seasons have ended.
Weapons like Season of the Defiance ones will more than likely become available once the Avalon exotic mission moves into the Exotic Mission rotator, similarly with the Starcrossed exotic mission and the Season of the Wish weapons. I am unsure about the Wicked Implement mission since it is a hidden part of the Deep Dives mode and it is currently unknown what will happen with the Season of the Witch weapons, since that did not come with an exotic mission since the Crota's End raid came out the same season. It is almost certain that the Vexcalibur and the Wish-Keeper missions will remain available through their respective exotic missions since those missions were designed like how the current exotic mission rotator works with normal mode rewarding the weapon and legend mode giving the intrinsics and catalysts.
Still advisable to get those craftable weapons done now, because getting the patterns via the exotic mission rotator will take forever to get those weapons. One of my friends missed Season of the Seraph and is still trying to finish getting those weapons via Operation Seraph Shield exotic mission.
Other items like cosmetics from the older season passes are unavailable if you did not play during that particular season. Bungie has been known to sell those cosmetics in the shop as they brought back the Season of Undying and Dawn cosmetics in the Eververse store.
Especially new players are getting axed here. Then again, nothing new there!
