Best Day 1 Raid Dps Options?
I have been crafting tons of stuff lately, I feel comfortable when it comes to ad clearing, as I have things that can reliably deal with them, but I am not too sure about boss dps. What would be the best options for boss dps in the day 1 raid?

The meta is yet to be determined due to the numerous balance changes, but the weapons you should definitely have on standby from this year would be:
Sleeper + catalyst
Triple Tap + firing line LFR (taipan or reed's)
cataclysmic with FTTC and bait and switch
hothead or royal entry with field prep and clown cartridge
gjallarhorn
bump in the night with demo and chill clip
wendigo with explosive light
palmyra B with explosive light and autoloading
Grand overture

It's also worth keeping a whirlwind blades falling guillotine or a lament, since you never know when we'll need a sword. Some off meta options that could potentially be useful would also be 1k voices (after the buff) and parasite (for insane burst). It's also worth getting your hands on touch malice (or just outbreak if you cant), since ammo is often tight on day one and primary dps can be essential to closing out the fight

Would the catalyst for touch be worth it?

absolutely, touch is actually worse than outbreak without the catalyst if im not mistaken

I'd suggest going for Outbreak over Touch. Not only is it directly accessible for all players but there's no risk in using it. The only way I'd consider Touch over Outbreak for a Day 1 attempt would be if it had an applicable champion mod on the artifact.

I have both outbreak (with catalyst) and touch (without), I might just get the catalyst for touch just incase, just to be safe. I will probably be using outbreak if it is a final stand no ammo situation.

Touch significantly outperforms outbreak for the first 5-10 seconds of dps, and after that both touch and outbreak will be about on par with dps (assuming 6 players). Something i forgot to mention though is hierarchy of needs. Hierarchy outperforms both touch and outbreak by about 12%, but ONLY at the max 30m damage ramp up. The choice is mostly preference, but generally hierarchy requires you to be standing still at along distance and provides a decent primary outside of dps, touch requires you to be standing still in a well and provides an awful primary outside of dps, and outbreak has no real requirements but provides you with a great primary outside of dps, though underperforms in dps

gally if boss got annoying crit spot, linears if it got easy crit spot. Doubt this would change at this point.
