I've never gotten to a high level yet though all my characters are new so im pretty much new
As for the dodge it is not really powerful in itself. It is just a roll, sure you can evade but it is about its utilities. You can pick to reload your gun, or fill your melee ability if enemies are rather close. This can lead to powerful loops paired with the right exotic.
For instance, Ahamkara arms with tripmines allow to have almost permanentely melee and nades (tripmines) up. On top Gunpowder Gamble aspect would give a big shootable bomb every 3 ability or 6 solar weapon defeats. Nice to pair with it.
Void hunter can go invisible upon dodge and there are exotics that buff it further as Graviton Forfeit.
Wormhusk mask gives now around 70? (prior 44) HP back each dodge.
You want to reload all weapons and have that melee reload dodge (gambler's dodge) and have faster handling? Take Dragon's Shadow chest piece.
These are some examples and there are also mods that allow to use it more often as Utility Kickstart or some void mod on class item (cape). Aim for 100 Mobility.
Take your time and see it is worthwhile but nothing wrong to test the other classes as well.

Actually yesterday i played my first strike and my teammate went invisible after they dodged. I didn't know how they did it til now
I think both dodges are available from the start but maybe visit Ikora in the middle of the Tower map to buy the missing Ability alternatives and Aspects/Fragments. Don't forget to 'meditate' after buying right next to her to get them.
Right click on your subclass symbol on character screen (top left) to pick what you see fit. I would go for Gambler's Dodge (melee refill) over Marksman (reload) as there are also perks as Auto Loading Holster or as I mentioned Dragon's Shadow that allows to reload ALL weapons and buffs mobility + handling for 10s. A bit boring but so are stompees
Assassin's Cowl (Shadowkeep exotic) grants invisiblity with all subclasses after charged melee or finisher. But void is a solid choice especially for harder content. I slept on arc and just came back. It seems very strong but flickers too much. Also I play least Hunter most WL.
There is lot to try out especially with the 3.0 subclasses.
